Southern Potato Salad with Chow Chow: A Relish Lover’s Delight

I participated in a McKinsey accelerator programme for founders several months ago.  In one of the breakout groups, we shared what our companies did. In response to my presentation about The Garden of Eva, one of the founders said, “I’m from Tennessee.  I know all about chow chow.  We stir it into our potato salad.” 

I love sharing and celebrating the rich flavours and traditions of Southern cuisine, which is my heritage on my mother’s side of the family. If you’re a fan of relish, you’re in for a treat with our Southern Potato Salad with Chow Chow. This classic dish combines the creamy goodness of Yukon gold potatoes with the tangy kick of our signature American Southern Chow Chow, which has been shortlisted for a Quality Foods Award. It’s perfect for family gatherings, picnics, or any occasion that calls for a hearty and flavourful side dish. It’s addictive. Honestly.

Ingredients:

  • 1.6 kilograms of Yukon gold potatoes, peeled and cut into 1.5 cm cubes
  • 1.5 teaspoons of kosher salt (9 grams)
  • 115 grams of mayonnaise
  • 1.5 tablespoons mustard (21 grams)
  • 1 tablespoon of cider vinegar (22 ml/gram)
  • 3 hard-boiled eggs, peeled and chopped
  • 1 ½ celery sticks, chopped
  • ½ onion, chopped
  • ¾ jar of Garden of Eva American Southern Chow Chow, drained
  • Salt and pepper to taste
  • Parsley (optional, for garnish)
  • Paprika (optional, for garnish)

Directions:

  1. Place potatoes in a stock pot and cover with cold water and kosher salt.
  2. Bring to a boil, then reduce to a simmer, cooking for about 5 to 10 minutes or until tender. Drain well.
  3. In a medium bowl, combine mayonnaise, mustard, and vinegar.
  4. Add potatoes, chopped eggs, celery, onion, and Garden of Eva American Southern Chow Chow. Toss to combine.
  5. Season with salt and pepper. Garnish with paprika and parsley.
