The vision for Garden of Eva started in the parking lot of a pan-Asian supermarket in Dorchester, Massachusetts. I was waiting for it to open and planned to buy unwaxed lemons to preserve for a Moroccan tagine that I wanted to make.
Somehow my childhood experiences of pickling and preserving with my Virginia-born and raised mom connected with my global travel. I saw pickles from Southeast Asia, North Africa and the Middle East, the American South, and Latin America all coming together in that moment. It literally felt like a lightning bolt.
The seed for Garden of Eva as a company that makes pickles representing the world's food cultures was planted in that moment.
